Instructions

Preheat the oven to 350 degrees Fahrenheit. Grease and flour a 9-inch round cake pan or a 9x13-inch baking pan.

In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, cloves, and salt. In a separate bowl, whisk together the oil, honey, molasses, eggs, and vanilla extract.

Add the wet ingredients to the dry ingredients and mix until combined. Add the coffee, orange juice, raisins, and nuts (if using) and mix until combined.

Pour the batter into the prepared pan and bake for 45 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool for 10 minutes before removing from the pan.
