It’s that time of year again when we get to indulge in some delicious food, and nothing says Christmas like a classic Christmas cake. James Martin’s recipe is a great way to enjoy a classic festive treat. Here’s the recipe so you can make your own Christmas cake.

Ingredients

  • 450g (1lb) mixed dried fruit
  • 100g (3½oz) glace cherries
  • 50g (2oz) chopped mixed peel
  • 50g (2oz) blanched almonds, chopped
  • 1 orange, zest only
  • 1 lemon, zest only
  • 50g (2oz) plain flour
  • 50g (2oz) ground almonds
  • ½tsp ground cinnamon
  • ¼tsp ground mixed spice
  • 225g (8oz) butter
  • 225g (8oz) soft light brown sugar
  • 4 large eggs
  • 2tbsp black treacle
  • 2tbsp brandy
  • 25g (1oz) dark chocolate, grated

Instructions

The night before you plan to make the cake, mix together the dried fruit, glace cherries, mixed peel, almonds, orange and lemon zests, flour, ground almonds, cinnamon and mixed spice in a large bowl. Add the brandy and stir to combine. Cover and leave to soak overnight.

The next day, preheat the oven to 160°C/140°C fan/Gas 3 and grease and line a 23cm (9in) round cake tin. Cream together the butter and sugar until light and fluffy. Add the eggs one at a time, then add the treacle and mix to combine. Fold in the soaked fruit mixture, then spoon the mixture into the tin and level the surface.

Bake the cake for 1½-2 hours or until a skewer inserted into the middle comes out clean. If the cake is browning too quickly, cover with a sheet of baking parchment. Leave to cool in the tin for 10 minutes before turning out onto a wire rack to cool completely.

To decorate, melt the dark chocolate in a bowl over a pan of simmering water. Drizzle the melted chocolate over the top of the cake and leave to set before serving.
