Ingredients

Instructions

Preheat the oven to 350 degrees F. Grease and flour two 8-inch round cake pans. In a medium bowl, sift together the flour, baking soda, baking powder and salt. Set aside.

In a large bowl, cream together the sugar and butter until light and fluffy. Add the eggs one at a time, mixing until combined. Add the vanilla extract and mix. Add the dry ingredients in thirds, alternating with the buttermilk. Divide the batter between the two pans and spread evenly. Bake for 25-30 minutes, or until a toothpick inserted into the center of the cake comes out clean.

Remove the cakes from the pans and let cool completely. Spread the raspberry jam over the top of the first layer, if desired. Place the second layer on top of the first and sift the powdered sugar over the top of the cake, if desired. Cut into wedges and serve.
