Cannoli are typically served as a dessert, but they can also be used to make delicious cakes. This Italian Cannoli Cake recipe is a unique and delicious way to enjoy the classic Italian pastry in cake form.

Ingredients

  • 1 box of yellow cake mix
  • 3 large eggs
  • 1/2 cup of vegetable oil
  • 1 cup of water
  • 1/2 teaspoon of ground cinnamon
  • 1/2 teaspoon of ground nutmeg
  • 1 (15 ounce) container of ricotta cheese
  • 2/3 cup of granulated sugar
  • 1 teaspoon of pure vanilla extract
  • 1/2 cup of mini semi-sweet chocolate chips
  • 1/4 cup of all-purpose flour
  • 1/4 cup of vegetable oil for frying

Instructions

Cake

Preheat oven to 350 degrees F. Grease and flour a 9-inch round cake pan. In a large bowl, combine the cake mix, eggs, 1/2 cup of vegetable oil, water, cinnamon, and nutmeg. Beat with an electric mixer on low speed for 1 minute, then increase speed to medium and continue to beat for an additional 2 minutes. Pour into the prepared cake pan and bake for 25 to 30 minutes, or until a toothpick inserted into the center comes out clean. Allow to cool completely before frosting.

Filling

In a medium bowl, mix together the ricotta cheese, sugar, and vanilla extract until smooth. Stir in the chocolate chips. Cover and refrigerate for at least 1 hour to allow the flavors to meld.

Cannoli Shells

In a shallow bowl, mix the flour, vegetable oil, and 1/4 cup of water until the mixture is thick and has the consistency of pancake batter. Heat the 1/4 cup of vegetable oil in a large skillet over medium heat. When the oil is hot, drop 1/4 cup of batter into the oil. Fry for 1 to 2 minutes, or until golden brown. Flip and cook an additional 1 to 2 minutes. Remove from the oil and place on a paper towel-lined plate. Repeat with the remaining batter. When cool enough to handle, shape the shells into cylinders by rolling them around a wooden spoon handle. Allow the shells to cool completely before filling.

Assembly

To assemble the cake, cut the cooled cake into two layers. Place one layer onto a cake plate. Spread the ricotta cheese filling over the layer. Place the second layer on top. Frost the top and sides of the cake with your favorite frosting. Place the cannoli shells around the side of the cake and serve.
