Chocolate Cake with Coconut Frosting

Ingredients:

- 2 cups all-purpose flour - 1 teaspoon baking soda - 1/2 teaspoon salt - 1/3 cup cocoa powder - 1 cup white sugar - 1/2 cup vegetable oil - 1 cup brewed coffee - 1 teaspoon vanilla extract - 2 eggs - 1 cup shredded coconut - 1/4 cup butter - 2 tablespoons honey

Instructions:

1. Preheat oven to 350°F (175°C). Grease and flour an 8-inch round cake pan. 2. In a medium bowl, mix together the flour, baking soda, salt, and cocoa powder. 3. In a large bowl, stir together the sugar, oil, coffee, and vanilla. Beat in the eggs one at a time, stirring until fully incorporated. 4. Gradually stir in the dry ingredients to the wet ingredients, stirring until just combined. 5. Pour the batter into the prepared pan and bake for 30 minutes, or until a toothpick inserted in the center comes out clean. 6. Allow the cake to cool before frosting. 7. To make the frosting, melt the butter in a small saucepan over low heat. Stir in the shredded coconut and honey, and cook for 2 minutes, stirring constantly. 8. Spread the frosting over the cake.
