Ingredients

  • 175g butter

Instructions

1. Preheat your oven to 160°C/140°C fan/gas 3. Grease and line a 2lb loaf tin with baking parchment.

3. Sift the flour into the mixture and add the grated lemon zest. Use a spoon to fold the dry ingredients into the mixture until everything is just combined. Add the milk a tablespoon at a time until the mixture is soft and dropping off the spoon.

4. Spoon the mixture into the prepared tin and level the top. Bake in the preheated oven for 40-45 minutes or until a skewer inserted into the centre of the cake comes out clean.

5. For the glaze, put the lemon juice and caster sugar into a small saucepan and heat until the sugar has dissolved. Prick the top of the hot cake all over with a skewer and pour the glaze over the top.

6. Leave the cake in the tin to cool completely before turning out and serving.
