Instructions

2. In a large bowl, cream the butter and sugar together until light and fluffy. Add the eggs, one at a time, beating well after each addition. Add the vanilla extract and mix well.
3. In a separate bowl, sift together the flour, bicarbonate of soda, and baking powder. Add the flour mixture to the butter mixture, alternating with the milk. Add the lemon zest and mix until just combined.
4. Spoon the cake batter into the prepared tin and spread evenly. Bake for 40-45 minutes, or until a skewer inserted into the centre of the cake comes out clean. Allow to cool in the tin for 10 minutes before transferring to a wire rack to cool completely.
5. Once cooled, dust the top of the cake with icing sugar and serve.
