Ingredients

For the Cake:

• 450g plain flour

• 450g caster sugar

• 450g butter

• 6 eggs

• 2 teaspoons baking powder

• 2 tablespoons of lemon zest

• 4 tablespoons of lemon juice

• 1 teaspoon of vanilla extract

• Butter for greasing the tin

For the Drizzle:

• 150g icing sugar

• 4 tablespoons of lemon juice

Instructions

1. Preheat the oven to 180°C/Gas Mark 4.

2. Grease two 8 inch cake tins with butter and line the bottom with greaseproof paper.

3. Put the butter and sugar into a bowl and whisk until light and fluffy.

4. Add the eggs one at a time, beating well between each one.

5. Add the flour and baking powder and mix until combined.

6. Add the lemon zest, juice and vanilla extract and mix until combined.

7. Divide the mixture between the two tins and bake for 25-30 minutes until golden brown and a skewer inserted into the centre comes out clean.

8. Leave the cakes to cool in the tins for 10 minutes, then turn out onto a wire rack to cool completely.

9. For the drizzle, mix the icing sugar and lemon juice together until smooth and drizzle over the top of the cakes.

10. Serve the cakes and enjoy!
