Ingredients



To make Jamie Oliver’s Christmas Cake, you’ll need:

  • 250g unsalted butter
  • 250g light muscovado sugar
  • 4 large eggs
  • 250g self-raising flour
  • 125g ground almonds
  • 1 teaspoon of ground nutmeg
  • 1 teaspoon of ground cinnamon
  • Grated zest of 1 orange
  • 75g raisins
  • 75g sultanas
  • 50g glacĂ© cherries, sliced
  • 200ml brandy

Instructions



To make Jamie Oliver’s Christmas Cake, follow these steps:

Step 1: Preheat the Oven



Preheat your oven to 160°C (fan 140°C, gas mark 3). Grease and line a 20cm round cake tin with baking paper.

Step 2: Prepare the Cake Mixture



In a large bowl, cream together the butter and sugar until light and fluffy. Crack in the eggs one at a time, stirring well between each addition. Sift in the flour, ground almonds, nutmeg and cinnamon and fold together with a wooden spoon until well combined. Finally, stir in the orange zest, raisins, sultanas, and glacé cherries.

Step 3: Bake the Cake



Spoon the cake mixture into the prepared tin. Level the top and bake in the preheated oven for 1 hour and 45 minutes, or until a skewer inserted into the centre comes out clean. Once cooked, remove from the oven and allow to cool in the tin for 10 minutes.

Step 4: Soak the Cake



Remove the cake from the tin and place on a wire rack. Prick the top of the cake with a skewer and spoon over the brandy. Allow the cake to cool completely before serving.
