Ingredients



For the sponge:

- 4 large eggs, lightly beaten
- 175g caster sugar
- 175g self-raising flour
- 2 tsp instant coffee granules dissolved in 2 tbsp boiling water
- 2 tsp cocoa powder

For the filling:

- 500g mascarpone cheese
- 3 tbsp caster sugar
- 2 tbsp Marsala wine
- 2 tsp vanilla extract
- 125ml whipping cream

For the topping:

- 125ml whipping cream
- 2 tsp instant coffee granules dissolved in 2 tbsp boiling water
- 2 tsp cocoa powder
- 2 tbsp icing sugar
- 2 tbsp chocolate shavings

Instructions



1. Preheat the oven to 180°C/350°F/Gas 4. Grease and line a 20cm/8in round cake tin.
2. To make the sponge, put the eggs and sugar in a bowl and whisk until pale and fluffy.
3. Sieve the flour into the bowl and fold it in.
4. Pour the coffee and cocoa mixture onto the sponge mixture and fold it in.
5. Pour the mixture into the prepared tin and bake for 25–30 minutes, or until a skewer inserted into the centre of the cake comes out clean.
6. Leave the cake to cool in the tin for 5 minutes, then turn it out onto a wire rack to cool completely.
7. To make the filling, mix the mascarpone, sugar, Marsala, and vanilla extract together.
8. In a separate bowl, whisk the cream until it forms soft peaks.
9. Fold the cream into the mascarpone mixture.
10. To assemble the cake, cut the sponge in half and spread one half with the mascarpone filling. Place the other half of the sponge on top.
11. To make the topping, whisk the cream until it forms soft peaks.
12. Fold the coffee and cocoa mixture into the cream.
13. Spread the cream over the top and sides of the cake.
14. Sprinkle the icing sugar and chocolate shavings over the top of the cake.
15. Chill the cake in the fridge for at least an hour before serving.
