Ingredients
- 1/2 cup (1 stick) unsalted butter, at room temperature
- 1 cup granulated sugar
- 2 extra-large eggs, at room temperature
- 1 teaspoon pure vanilla extract
- 1/2 teaspoon grated lemon zest
- 1 1/2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon kosher salt
- 1/2 cup milk
- 3/4 cup fresh blueberries
- 3/4 cup fresh raspberries
- 1/2 recipe of the Ina Garten buttercream frosting
Instructions
Cake
Preheat the oven to 350°F. Grease an 8-inch round cake pan with butter and line the bottom with parchment paper. Grease the paper and dust the pan with flour.
In the bowl of an electric mixer fitted with the paddle attachment, cream the butter and sugar on medium-high speed for 3 minutes, or until light and fluffy. Scrape down the bowl with a rubber spatula. On medium speed, add the eggs, one at a time, and then the vanilla, lemon zest, and mix until combined. In a medium bowl, sift together the flour, baking powder, and salt. With the mixer on low speed, slowly add the flour mixture to the batter, and then add the milk. Mix until just combined. Scrape the batter into the prepared pan, smooth the top, and bake for 45 minutes, until a toothpick comes out clean.
Allow the cake to cool in the pan for 10 minutes, then turn it out onto a wire rack to cool completely. Place the cake on a serving plate.
Assembly
Arrange the blueberries in one row down the middle of the cake. Arrange the raspberries in a row on either side of the blueberries. Pipe the buttercream around the cake, starting at the bottom and working your way up. For a more rustic look, you can use a spatula to spread the buttercream around the cake.
