This hummingbird pound cake recipe is perfect for any occasion. It is a buttery, moist, and delicious pound cake full of tropical flavors. Ingredients:

  • 3/4 cup butter, room temperature
  • 3/4 cup vegetable oil
  • 3 cups granulated sugar
  • 6 large eggs, room temperature

  • 1/2 teaspoon ground cinnamon
  • 1 (14-ounce) can crushed pineapple, drained
  • 2 ripe bananas, mashed
  • 1/2 cup chopped pecans
  • 1/2 cup shredded coconut

Instructions:

1. Preheat Oven and Prepare Pan

Preheat the oven to 350 degrees F and lightly grease and flour a 12-cup Bundt pan. Set aside.

2. Cream Butter, Oil, and Sugar

In the bowl of a stand mixer, cream together the butter, oil, and sugar until light and fluffy, about 3 minutes. Add the eggs, one at a time, and beat until well incorporated. Scrape down the sides of the bowl as needed.

3. Add Dry Ingredients

In a separate bowl, whisk together the flour, baking powder, salt, and cinnamon. With the mixer on low speed, slowly add the dry ingredients to the wet ingredients and mix until just combined. Scrape down the sides of the bowl as needed.

4. Add In Remaining Ingredients

Add the crushed pineapple, mashed banana, pecans, and coconut to the batter and mix until just combined. Do not overmix.

5. Bake the Cake

Pour the batter into the prepared pan and bake for 55 minutes to 65 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow the cake to cool for 10 minutes in the pan before turning out onto a cooling rack to cool completely.
