For the frosting:
  • 1 cup unsalted butter, softened
  • 3-4 cups powdered sugar
  • 2 teaspoons pure vanilla extract
  • 1/4 cup Irish cream liqueur
  • 2-3 tablespoons heavy cream

Instructions

Making the Cake

Preheat the oven to 350°F. Grease and flour two 9-inch round cake pans and set aside. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

In the bowl of an electric mixer, combine the sugar and butter and beat on medium-high speed until light and fluffy, about 3 minutes. Add the eggs, one at a time, beating until combined. Add the vanilla extract and Irish cream liqueur and mix until combined.

Reduce the speed to low and add the flour mixture in three additions, alternating with the buttermilk, beginning and ending with the flour. Mix until just combined. Divide the batter evenly between the prepared pans.

Bake for 25-30 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow the cakes to cool in the pans for 10 minutes before turning out onto a wire rack to cool completely.

Frosting the Cake

In the bowl of an electric mixer, beat the butter on medium-high speed until light and fluffy, about 3 minutes. Reduce the speed to low and gradually add the powdered sugar. Increase the speed to medium and beat until combined. Add the vanilla extract, Irish cream liqueur, and 2 tablespoons of heavy cream. Beat on medium-high speed until light and fluffy, about 3 minutes.

Add more heavy cream if needed to achieve the desired consistency. Spread the frosting over the cooled cake layers. Refrigerate the cake for at least an hour before serving.
