Ingredients
For the cake:
- 4 large eggs
- 1 cup granulated sugar
- 1/2 cup vegetable oil
- 1 teaspoon vanilla extract
- 2/3 cup all-purpose flour
- 2 tablespoons cornstarch
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- 2 tablespoons warm water
For the filling:
- 1/2 cup heavy cream
- 2 tablespoons granulated sugar
- 1/2 teaspoon vanilla extract
- 1/2 cup raspberry jam
For the decorations:
- 1 cup white chocolate chips
- Sprinkles
- Colored sugar crystals
- Edible glitter
- Your favorite candies or nuts
Instructions
1. Preheat oven to 350 degrees Fahrenheit and grease a 15x10 inch rimmed baking sheet. Line with parchment paper and grease the parchment paper. Set aside.
2. In a large bowl, whisk together the eggs, sugar, oil, and vanilla extract until combined. Sift in the flour, cornstarch, baking powder, and salt and whisk until just combined. Add the warm water and whisk until the batter is smooth.
3. Pour the batter into the prepared baking sheet and spread it evenly. Bake for 10 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool for 10 minutes, then invert onto a wire rack to cool completely.
4. To make the filling, combine the heavy cream, sugar, and vanilla extract in a bowl and beat with an electric mixer until stiff peaks form. Fold in the raspberry jam until combined.
5. To assemble the cake, place the cooled cake onto a sheet of parchment paper. Spread the filling evenly over the cake using an offset spatula. Starting from the long side, carefully roll up the cake. Wrap the cake in the parchment paper to help keep its shape.
6. Place the cake in the refrigerator for at least 30 minutes. Meanwhile, melt the white chocolate chips in a double boiler or in the microwave. Remove the cake from the refrigerator and spread the melted chocolate over the top. Decorate with sprinkles, colored sugar crystals, edible glitter, and candies or nuts.
7. Slice and serve the cake. Enjoy!
