Ingredients

  • 1 package of active dry yeast
  • ½ cup of warm water (105-115°F)
  • 1 teaspoon of sugar
  • 2 tablespoons of shortening, melted
  • 2 eggs
  • 1 teaspoon of salt
  • 3 ½ cups of all-purpose flour
  • ½ cup of sugar
  • 2 tablespoons of ground cinnamon
  • 1 cup of raisins
  • 1 cup of chopped pecans
  • 1 cup of melted butter
  • 1 cup of confectioners’ sugar
  • 2 teaspoons of vanilla extract
  • 1-2 tablespoons of warm water
  • Purple, green, and gold sugar

Instructions

To start, in a small bowl, dissolve the yeast and 1 teaspoon of sugar in the warm water. Let the mixture rest for 10 minutes, or until it is foamy. In a separate bowl, combine the shortening, eggs, salt, and ½ cup of sugar. Add the yeast mixture to the bowl, and mix until everything is combined. Gradually add the flour, one cup at a time, stirring with a wooden spoon until the dough comes together.

Once the dough is mixed, turn it out onto a lightly floured surface and knead until it is smooth and elastic. Place the dough in a large, greased bowl and cover with a damp cloth. Allow the dough to rise in a warm place for one hour, or until it has doubled in size. Once the dough has risen, punch it down and turn it out onto a lightly floured surface.

Roll the dough out into a large rectangle. Combine the cinnamon and remaining sugar in a bowl, then sprinkle the mixture over the dough. Next, sprinkle the raisins, pecans, and melted butter over the dough. Roll the dough up tightly, then shape into a ring. Place the ring on a greased baking sheet and cover with a damp cloth. Allow the dough to rise in a warm place for an additional hour, or until it has doubled in size.

Preheat the oven to 375°F. Once the dough has risen, bake for 25-30 minutes, or until the king cake is golden brown. Allow the cake to cool before frosting. To make the frosting, combine the confectioners’ sugar, vanilla extract, and warm water in a bowl. Mix until the frosting is smooth, then spread over the cooled king cake. Sprinkle the purple, green, and gold sugar over the top of the cake, and serve.
