For the cake, you will need:

  • 1 cup brown sugar
  • 3 eggs
  • 1/2 cup molasses

  • 1/4 teaspoon ground nutmeg
  • 1 cup boiling water

  • 1/2 cup butter, melted
  • 1/2 cup white sugar
  • 2 tablespoons ground ginger
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg

Instructions

Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.

In a medium bowl, sift together the flour, baking powder, baking soda, and salt. Set aside.

In a large bowl, cream together the butter, white sugar, and brown sugar until light and fluffy. Beat in the eggs one at a time until well blended. Stir in the molasses, ground ginger, cinnamon, cloves, and nutmeg. Gradually add the dry ingredients to the wet ingredients and mix until just combined. Pour in the boiling water and stir until the batter is smooth.

Pour the batter into the prepared pan and bake for 25 to 30 minutes, or until a toothpick inserted into the center of the cake comes out clean. Remove the cake from the oven and let it cool for 10 minutes.
