  • 1/2 cup chopped fresh blueberries
  • 1/2 cup chopped fresh mango
  • 1/2 cup chopped kiwi
  • 1/4 cup honey
  • 1/4 cup nonfat plain yogurt
  • 1/4 cup low-fat cream cheese
  • 1/4 cup nonfat sour cream
  • 1/4 cup low-fat milk
  • 2 tablespoons orange juice
  • 1 tablespoon lemon juice

You will also need a 9-inch round cake pan and a 9-inch round parchment paper.

Instructions

Preheat your oven to 350 degrees Fahrenheit. Grease the 9-inch round cake pan with butter and line it with parchment paper. Sift together the flour, baking powder, baking soda and salt in a medium bowl and set aside.

In a large bowl, cream together the butter, vegetable oil and sugar with an electric mixer on medium speed until light and fluffy. Add the eggs, one at a time, beating well after each addition. Beat in the vanilla extract.

Add the flour mixture to the butter mixture in three batches, alternating with the buttermilk. Mix until just combined. Gently fold in the applesauce, walnuts, coconut, raisins, dates, figs, apricots, pineapple, strawberries, banana, blueberries, mango and kiwi. Pour the batter into the prepared pan and bake for 35-40 minutes or until a toothpick inserted into the center comes out clean.

Meanwhile, in a small bowl, whisk together the honey, yogurt, cream cheese, sour cream, milk, orange juice and lemon juice. When the cake is done, allow it to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. Once cooled, pour the honey mixture over the top of the cake and spread it evenly.
