Mary Berry Jaffa Cake Recipe

Ingredients:
- 200g butter, softened
- 200g caster sugar

- 225g dark chocolate, broken into pieces
- 150ml double cream
Instructions:
Step 1: Preheat the oven to 180°C/350°F/Gas Mark 4.
Begin by preheating your oven to the correct temperature. This is an important step as it ensures that your cake will bake evenly.
Step 2: Grease and line an 8-inch round cake tin.
To ensure your cake comes out of the tin easily, it’s important to grease and line the cake tin with parchment paper. This will also help to keep the cake from sticking to the tin.
Step 3: Cream the butter and sugar together in a bowl.
In a large bowl, use an electric whisk to cream together the softened butter and caster sugar. Beat the mixture until it is light and fluffy.
Step 4: Beat in the eggs, one at a time.
Add the eggs to the creamed butter and sugar mixture one at a time. Beat each egg in thoroughly before adding the next.
Step 5: Sift in the flour and baking powder.

Spoon the cake mixture into the prepared cake tin and spread evenly. Bake in the preheated oven for 25 minutes, or until a skewer inserted into the centre comes out clean.
Step 7: Make the orange jelly.
To make the orange jelly, place the gelatine into a small bowl and add the boiling water. Stir until the gelatine has dissolved, then leave to cool.
Step 8: Assemble the cake.
Once the cake has cooled, spread the orange jelly over the top. Place the cake in the fridge for 30 minutes, or until the jelly has set.
Step 9: Make the chocolate ganache.
To make the ganache, place the chocolate and cream into a heatproof bowl and place over a pan of simmering water. Stir until the chocolate has melted and the mixture is smooth and glossy.
Step 10: Pour the ganache over the cake.
Pour the melted chocolate ganache over the top of the cake and spread evenly. Place back in the fridge for 30 minutes, or until the ganache has set.
