Ingredients
For the cake:
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- ½ teaspoon salt
- ½ cup butter, softened
- 1 cup granulated sugar
- 2 eggs
- 1 teaspoon vanilla extract
- ¾ cup milk
For the chocolate coating:
- 1 cup semi-sweet chocolate chips
- 2 tablespoons butter
- 2 tablespoons vegetable oil
For the coconut coating:
- 2 cups sweetened coconut flakes
Instructions
1. Preheat the oven to 350°F (175°C). Grease a 9x13-inch baking pan and set aside.
2. In a medium bowl, whisk together the flour, baking powder and salt. Set aside.
3. In a large bowl, beat together the butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Beat in the vanilla extract.
4. Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Beat until just combined.
5. Pour the batter into the prepared pan and spread evenly. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Let cool completely.
6. Once the cake is cooled, cut it into squares.
7. To make the chocolate coating: In a medium bowl, combine the chocolate chips, butter and vegetable oil. Place the bowl over a saucepan filled with simmering water, stirring occasionally until the chocolate is melted and smooth.
8. Dip each piece of cake into the melted chocolate and gently shake off any excess. Place the chocolate-covered pieces of cake on a baking sheet lined with parchment paper. Allow the chocolate to set.
9. To make the coconut coating: Spread the coconut flakes onto a large plate. Dip each piece of cake into the coconut, pressing gently to make sure it sticks. Return the cake to the baking sheet and repeat with the remaining pieces.
10. Serve the Lamington Cake chilled or at room temperature. Enjoy!
