Haydel's King Cake Recipe

Instructions
Cake Dough
In a large bowl, dissolve the yeast in warm water. Stir in the sugar, melted butter, warm milk, salt, and eggs. Gradually mix in the flour until a soft dough forms. Knead the dough on a floured surface for 5 minutes. Place the dough in a greased bowl, cover, and let it rise until doubled in size, about 1 hour.
Filling
In a medium bowl, mix together the raisins, pecans, cinnamon and sugar mixture, melted butter, white sugar, nutmeg, and cardamom. Divide the dough in half and roll each half into an 18x9 inch rectangle. Spread the filling over the dough and roll up each rectangle, jelly-roll style. Place the rolls on a greased baking sheet, forming an oval. Bake at 350 degrees F (175 degrees C) for 25 minutes.
Icing
In a small bowl, mix together the confectioners' sugar, water, and cinnamon. Drizzle over the cooled cake. In a medium bowl, whip the heavy cream until stiff. Spread the whipped cream over the cake and sprinkle with chopped pecans and colored sugar. Let it chill before serving.
