  • 1/2 cup all-purpose flour
  • 3/4 teaspoon baking powder
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 4 tablespoons unsalted butter, softened
  • 3/4 cup granulated white sugar
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • 1/2 cup plain yogurt
  • 1/4 cup freshly squeezed orange juice
  • 1/4 cup freshly squeezed lime juice
  • 2 tablespoons finely grated orange zest
  • 2 tablespoons finely grated lime zest
  • 1/2 cup mango puree
  • 1/2 cup heavy cream
  • 2 tablespoons powdered sugar

Instructions

Begin by preheating the oven to 350 degrees F (177 degrees C). Grease and flour a 9 inch (23 cm) springform pan. In a small bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

In the bowl of your electric mixer, or with a hand mixer, beat the butter and sugar until light and fluffy (about 2 minutes). Add the eggs one at a time, beating well after each addition. Beat in the vanilla extract. With the mixer on low speed, add the yogurt and mix just until incorporated. Then add the orange juice, lime juice, and the zests and mix just until incorporated. Add the mango puree and mix until just incorporated.

Add the flour mixture and mix just until incorporated. Pour the batter into the prepared pan and bake for about 35 - 40 minutes, or until a toothpick inserted into the center of the cake comes out clean. Remove from oven and place on a wire rack to cool. When cool, remove the sides of the pan.

To make the mango mousse, you’ll need to whip the heavy cream with the powdered sugar until it forms soft peaks. In a separate bowl, mix the mango puree until smooth. Gently fold the mango puree into the whipped cream. Spread the mousse over the top of the cooled cake.
