Ingredients Needed

  • 1/4 cup heavy cream
  • Green and gold sprinkles, for decorating

Instructions

1. Preheat oven to 350 degrees F. Grease and flour two 8-inch round cake pans and set aside.

2. In a medium bowl, whisk together the flour, baking powder, baking soda and salt. Set aside.

3. In a large bowl, beat the butter and sugar together until light and fluffy. Add the eggs one at a time, beating well after each addition. Beat in the vanilla extract.

4. Add the dry ingredients in two batches, alternating with the sour cream. Beat until just combined. Divide the batter evenly between two bowls and add the green and gold food coloring to each bowl. Stir until desired color is reached.

5. Pour each color of batter into the prepared pans and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Cool in the pans for 10 minutes before transferring to a wire rack to cool completely.

6. To make the icing, beat together the cream cheese and butter until light and fluffy. Add the confectioners' sugar and beat until smooth. Beat in the vanilla extract and cream until creamy and smooth. If the icing is too thick, add a bit more cream. If it is too thin, add a bit more sugar.

7. Place one layer of the cake on a cake stand or plate. Spread 1/2 cup of the icing over the top of the cake. Place the other layer of cake on top. Spread the remaining icing over the top and sides of the cake. Decorate with green and gold sprinkles.
