Ingredients

  • 200g caster sugar
  • 200g butter, softened
  • 4 eggs
  • 200g self-raising flour
  • 1 teaspoon baking powder

Instructions

Step 1: Preheat the oven



Preheat the oven to 180°C (160°C fan). Grease and line two 20cm round cake tins with baking parchment.

Step 2: Prepare the cake batter



In a large bowl, cream together the butter and caster sugar until light and fluffy. Beat in the eggs one at a time, adding a spoonful of the self-raising flour after each one. Add the remaining flour, baking powder and milk and fold everything together until you have a smooth cake batter.

Step 3: Bake the cakes



Divide the cake batter evenly between the two prepared tins and bake in the preheated oven for 25-30 minutes until golden and a skewer inserted into the centre of each cake comes out clean. Allow the cakes to cool for a few minutes before turning them out onto a wire rack to cool completely.

Step 4: Make the buttercream filling



In a large bowl, beat together the butter and icing sugar until pale and fluffy. Beat in the lemon juice and vanilla essence until combined.

Step 5: Assemble the cake



Place one of the cooled cakes on a serving plate. Spread the buttercream over the top and place the other cake on top.

Step 6: Make the lemon drizzle



In a small bowl, mix together the lemon juice and icing sugar until you have a thick syrup. Drizzle the syrup over the top of the cake and set aside for the drizzle to set.

Step 7: Serve the cake
