Ingredients
- 175g butter, softened
- 175g caster sugar
- 3 eggs
- 175g self-raising flour
- 1 teaspoon baking powder
- zest of 1 lemon
- 2 tablespoons milk
- For the syrup glaze:
- 4 tablespoons caster sugar
- juice of 1 lemon
Instructions
Preheat the oven to 180C (160C fan)/350F/gas 4. Grease and line a 20cm (8 inch) round cake tin with baking parchment.
In a large bowl, cream together the butter and sugar until light and fluffy. Add the eggs, one at a time, beating well after each addition. Sift in the self-raising flour and baking powder, and add the lemon zest and milk. Beat together until the mixture is smooth and combined.
Spoon the mixture into the prepared cake tin, and spread out evenly. Bake in the preheated oven for 30-35 minutes, or until a skewer inserted into the centre of the cake comes out clean. Leave to cool in the tin for 10 minutes, then turn out onto a wire rack and leave to cool completely.
To make the syrup glaze, mix the caster sugar and lemon juice together in a small bowl until combined. When the cake is cool, spoon the syrup over the top of the cake and leave to soak in.
