- A few drops of vanilla essence

Instructions



1. Preheat the oven to 350°F (180°C). Grease and line an 8 inch round cake tin and set aside.
2. In a bowl, cream together the butter and the sugar until pale and fluffy.
3. Gradually beat in the eggs, one at a time, ensuring each one is fully incorporated before adding the next.
4. Sift in the flour and fold in gently. Add the milk and mix until everything is combined.
5. Pour the mixture into the cake tin and spread evenly. Bake for 25-30 minutes, or until a skewer inserted into the center of the cake comes out clean.
6. Leave the cake to cool in the tin for 10 minutes before turning out onto a wire rack. Once the cake is cooled, split it in half and spread the raspberry jam in between the two layers.
7. To make the icing, beat the butter and icing sugar together in a bowl. Add the milk and a few drops of vanilla essence and beat until light and fluffy.
8. Spread the icing over the cake and leave to set. The cake can be served either at room temperature or chilled.
