Japanese Mont Blanc Cake Recipe

Gradually add the sifted flour mixture, and mix until just combined. Gently fold in the egg whites until just combined. Pour the batter into the prepared pan and bake for 40 minutes, or until a toothpick inserted in center of cake comes out clean.
Allow the cake to cool completely before assembling. When cooled, cut the cake in half horizontally, and place one of the halves on a serving plate. Spread the chestnut cream on top, and cover with the other cake half. Whip the heavy cream until soft peaks form, and spread over the cake. Sprinkle with toasted almond slices, if desired.
