Hungarian Christmas Cake Recipes
Ingredients
- 250 grams of butter
- 250 grams of caster sugar
- 4 large eggs
- 2 teaspoons of vanilla extract
- 250 grams of plain flour
- 1 teaspoon of baking powder
- 1/2 teaspoon of salt
- 150 milliliters of milk
- 200 grams of butter
- 200 grams of icing sugar
- 2 teaspoons of vanilla extract
- 2 tablespoons of milk
- 200 grams of icing sugar
- 2-3 tablespoons of water
- Food colouring of choice
- Edible decorations of choice (i.e. sprinkles, sugar pearls)
Instructions
Making the sponge cake:
Preheat the oven to 180°C and lightly grease and line two 20cm round cake tins. In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, followed by the vanilla extract. Sift in the flour, baking powder and salt, then fold into the mixture until just combined. Pour in the milk and mix until a smooth batter is formed.
Divide the batter equally between the two prepared tins and bake in the preheated oven for 25-30 minutes, or until lightly golden and a skewer inserted into the centre of the cakes comes out clean. Leave the cakes to cool in the tins for 10 minutes before transferring to a wire rack to cool completely.
Making the filling:
In a large bowl, beat the butter until soft and creamy. Sift in the icing sugar and add the vanilla extract and milk. Beat until light and fluffy. Set aside.
Assembling the cake:
Place one cake layer on a serving plate and spread with half of the buttercream. Place the second cake layer on top and spread with the remaining buttercream. Place in the fridge to chill for 30 minutes.
Making the icing:
In a medium bowl, sift the icing sugar and add enough water to create a thick but still runny icing. Divide the icing into several small bowls and add food colouring of choice to each to create your desired shades. Leave to set for 10 minutes before using a spoon or a piping bag to spread the icing over the cake. Decorate with edible decorations of choice.
Serve the cake at room temperature.
