Delicious Homemade Jaffa Cake Recipe

Ingredients
- 4 tablespoons of butter

Instructions
Preheat the oven to 180 degrees C (350 degrees F). Grease a 12-hole muffin tin with butter or oil and set aside.
In a bowl, cream together the butter and the caster sugar until light and fluffy. Beat in the eggs, one at a time, until fully combined.
Mix in the self-raising flour until fully incorporated. Divide the mixture between the 12 muffin cups, filling each one about three-quarters full.
Spoon 1 teaspoon of orange jam into the centre of each muffin cup. Bake in the preheated oven for 15 minutes, or until golden brown.
Remove from the oven and allow to cool for a few minutes. Melt the chocolate chips in a bowl over a pan of boiling water (or in the microwave).
Spoon a teaspoon of melted chocolate over the top of each muffin. Allow to cool completely before serving.
